Soils/exposure : 40% Kimmeridgian marls, 50% “caillottes” and 10% flint

Certification : Organic Agriculture since 2016 and Demeter (biodynamics) since 2021, in the process of conversion to biodynamics.
Vinification/aging : Manual harvest. Fermentation and vinification: 80% in concrete vats and 20% in 6000L tuns on the lees for 10 months. No input added during vinification and aging. Sulphited wine at 3gr/hl at the 1st sulphiting.
Taste and nose : Complex nose with fruity notes (plum, mirabelle plum,citrus), floralare (linden andflowers white). The mouth is round where we find a perfect balance between the fruity and the floral and sustainede by a beautiful minerality. Very nice length in the mouth.
Food pairing : Goes perfectly with fish such as cod or even salmon with lemon cream, and seafood. Also goes very well with white meats and goat cheeses.
