Certification : Certified since 2023 in “Organic farming”
Vinification/aging : Mechanical harvesting. Direct pressing. By gravity, settling for 24-48 hours then launch of the alcoholic fermentation which will last 15 days in stainless steel tanks. Aged in the same containers until bottling.
Taste and nose : Discreet but complex nose revealing fruity notes of citrus (lemon zest evolving towards tangerine) then mineral. Lively attack on the palate with aromas faithful to the smells, nice tension linked to the minerality (chalky). Wine full of finesse and elegance.
Food pairing : This wine will go well with pork, seafood, dishes with goat cheese or dishes spicys.
