Vinification/aging : Manual harvesting and selective sorting. Vinification in temperature-controlled stainless steel vats for 25 days. No addition of sulphites during vinification and ageing. Bottling under nitrogen inerting and DIAM corks. Aptitude for ageing: 3 to 5 years.
Taste and nose : The nose is fruity, creamy and spicy in which notes of plum and black cherry mingle. The attack on the palate is frank with a nice acidity that brings freshness. A delicious wine with a peppery retro-olfaction.
