Vinification/aging : Manual harvesting and selective sorting. Vinification in temperature-controlled stainless steel vats for 25 days. No addition of sulphites during vinification and ageing. Bottling under nitrogen inerting and DIAM corks. Aptitude for ageing: 3 to 5 years.
Taste and nose : A deep and brilliant garnet colour. A nose marked with very ripe fruit and a beautiful complexity. Notes of roasting, blackberries and crushed raspberries quickly appear, encouraging tasting. A lively and fresh mouth, with melted tannins, a soft finish. A very nice taste balance between the nose and the mouth. A pleasure wine to taste now and which has a structure allowing several years of conservation.
Food pairing : Red meats or meats with character (game, duck breasts, etc.) and cheeses.
