Vinification/aging : Manual harvesting and selective sorting. Fermentation for 25 days in stainless steel vats. 100% aged in new 500L French oak barrels for 12 months. No added sulphites. Bottling under nitrogen inerting and DIAM corks. Suitability for aging: wine ready to drink after 2 years of aging in the bottle. Maturity from 5 years and up to 10 to 20 years.
Taste and nose : A cuvée raised without suffering from a deep finery. Intense aromas of warmly ripened red and black berries. After a tonic attack, a mouth combining in perfect harmony, gourmet flavors, richness and silky tannins is revealed. The very persistent finish is of rare expressiveness.
Food pairing : Red meats or meats with character (game, duck breasts, etc.) and cheeses.
