Vinification/aging : After the manual and traditional harvest, the grapes are destemmed and directly pressed. The juice is then statically decanted by cooling for 24 hours, then it is vinified in barrels of 3, 4 and 5 years. Ageing: the wine in barrel remains on fine lees until racking. It is neither fined nor filtered and bottled after 1 year of ageing.
Taste and nose : Wine of exceptional balance. Aromas: very fine and powerful. They present a beautiful harmony of minerality, candied lemon, nutmeg and vanilla. Nice tension and length in the mouth. It combines the intense expressions of the fruit, the minerality of the terroir, the roundness and the spiciness of the barrel.
Food pairing : It is combined with more advanced dishes of white meat and fish in sauce.
