Vinification/aging : Direct pressing followed by cold settling (below 4°) for 24-48 hours. Alcoholic fermentation for 15 days and vinification by terroir until blending. 1st racking after FA (Jan.). Aged in temperature-controlled stainless steel vats. Bottling from April.
Taste and nose : The aromas of hazelnut and fresh walnuts are very typical of the appellation. A milky touch, floral (jasmine) and lemony nuances complete this elegant palette. Good persistence on the palate, liveliness and lovely almond notes on the finish.
Food pairing : This wine will go well as an aperitif, with fish, grilled fish, seafood and shellfish.
