Certification : Organic Agriculture since 2016 and Demeter (biodynamics) since 2021, in the process of conversion to biodynamics
Vinification/aging : Manual harvest. Winemaking : maceration for 30 days then aging for a year in 228l barrels (50% new barrels and 50% 1 year old). No input added during vinification and aging. Sulfite wine at 3gr/HL at the 1st racking.
Taste and nose : The nose is fruity and slightly toasted. The palate is rich and silky with notes of velvety black cherries and blackberries. The wine is balanced, generous and powerful with its length in the mouth. A Sancerre that could be confused blindly with an excellent Burgundian Pinot Noir!
Food pairing : This wine, perfect for aging, is to be enjoyed with red meats and game.
