Certification : Organic Agriculture since 2016 and Demeter (biodynamics) since 2021, in the process of conversion to biodynamics
Vinification/aging : Manual harvest. Fermentation and aging in ovoid vats for 12 months then storing the bottles with the bottom up for 6 months. No additives added during vinification and aging. Sulphited wine at 3gr/hl at the 1st sulphiting.
Taste and nose : Later harvest bringing a rich and greedy register in its aromatic. Delicious notes evoking ripe citrus fruits, apricot, pear as well as an exotic touch (lychee).
Food pairing : Goes perfectly with fish such as cod or even salmon with lemon cream, and seafood. Also goes very well with white meats and goat cheeses.
