Vinification/aging : Manual harvest. Whole bunch maceration for 30 days in tapered wooden vats then a year in vatting without sulphur. No input added during vinification and aging. Sulphited wine at 3gr/hl at the 1st sulphiting.
Taste and nose : We discover a very structured wine, both fruity (notes of stewed strawberry) and a beautiful freshness brought by the raffle of the bay (licorice stick). Tannic finish
Food pairing : Wine that goes well with strong red meats (game, duck breast) and fine cheeses.
