Soils/exposure : Terroir of 60% caillottes and 40% white earth

Age of the vines : 20 years

Certification : Organic Agriculture since 2016 and Demeter (biodynamics) since 2021, in the process of conversion to biodynamics

Vinification/aging : Manual harvest. The aging is done on the lees for 10 to 12 months in ovoid vats. Natural wine, without ever having had sulphite added during vinification and ageing. It is pure grape juice.

Taste and nose : Ample floral nose. Length in the mouth, good balance and great elegance.

Food pairing : Goes perfectly with fish, such as cod or even salmon with lemon cream, and seafood. Also goes very well with white meats and goat cheeses.
