Vinification/aging : Mechanical harvesting. 100% destemming (for more suppleness and finesse). Direct pressing at low pressure to extract the best juices. After cold static settling, fermentation takes place in temperature-controlled stainless steel vats at low temperature. A single filtration before bottling.
Taste and nose : Beautiful soft yellow color with green reflections. Notes of gooseberries on a slightly aniseed lemony background. A pleasant freshness in the mouth where minerality and lemony side combine in a beautiful harmony. A wine full of freshness with zesty accents which gives it a tense finish.
Food pairing : This wine goes wonderfully with a beautiful seafood platter, shellfish, grilled fish, not forgetting the famous local calf’s head and finishing with a variety of Crottins de Chavignol.
