Soils/exposure : Soil made up of geological formations dating from the Cretaceous. Clay-siliceous soils rich in flint. Plot of 22ha.
Certification : HVE and ISO 14001.
Vinification/aging : 100% destemming (for more suppleness and finesse). Direct pressing at low pressure to extract the best juices. After cold settling, fermentation takes place in temperature-controlled stainless steel vats at low temperature. Aging on fine lees lasts until preparation for bottling to keep all the freshness of the wine. This is only filtered once.
Taste and nose : Pale gold color with green highlights. The nose is expressive, with citrus notes (grapefruit) and a nice note of passion fruit on the finish. The attack on the palate is harmonious, supple and delicate with a long aromatic finish, supported by this beautiful minerality due to its flinty terroir. Powerful and elegant wine.
Food pairing : Goes perfectly with grilled sole, pan-fried langoustines, a scallop terrine and goat cheese (Crottin de Chavignol). Simply enjoyed as an aperitif.
