Soils/exposure : Clay-limestone “Caillottes”, plot of 2.40 ha.
Age of the vines : 35 years old, the oldest vines in the estate

Vinification/aging : Very slow pressing followed by cold settling. Fermentation and aging in oak barrels, 30% of which are new barrels. The alchemy takes place between exceptional terroirs, the wood of the oak forests of the region (Allogny, St Palais) and the climate of its cellars. Fermentation lasts from 2 to 7 months, which requires a patience of 24 months for ageing. The wine is stirred regularly to suspend the lees. The stay in barrels thus brings a new dimension to the wine in its structure, vanilla flavors and a better aptitude for ageing.
Taste and nose : Yellow color with golden nuances and green reflections. An intense nose where yellow fruits rub shoulders with a woody note without excess. A beautiful smoothness fills the palate and gives way to a rich and complex aromatic palette. Mineral notes, touches of tangerine and citrus zest on a discreetly toasted background bring a nice freshness to the whole. A nice balance that stays in the mouth with persistence.
Food pairing : Ideal with beautiful dishes such as a medallion of monkfish with saffron, a creamy risotto with seafood or even with a beautiful platter of aged cheeses.
