Vinification/aging : Mechanical harvesting. 100% destemming (for more suppleness and finesse). Direct pressing at low pressure to extract the best juices. After cold static settling, fermentation takes place in temperature-controlled stainless steel vats at low temperature.
Taste and nose : Intense yellow color with slight green reflections. A beautiful citrus nose complemented by white-fleshed fruits. A beautiful minerality in the mouth, with freshness. A frank and powerful finish brings a beautiful persistence to this wine.
Food pairing : Ideal with a poultry tajine with citrus fruits, a creamy prawn risotto or even a nice variation of Crottins de Chavignol.
