Certification : HVE level 3 since 2019 and at the end of the conversion to AB
Vinification/aging : Staggered manual harvests. Traditionally vinified and aged in Burgundy barrels from 1 to 3 years old for 12 months.
Taste and nose : This deep-coloured wine develops a complex panel of aromas of very ripe black fruit (blackberry) combined with roasted notes (cocoa and toast) and spices. It is delicately structured by structuring tannins which brings substance and power.
Food pairing : Dishes in sauce, duck, game, cassoulet, or other dishes with character. It will also go well with cheeses and chocolate desserts.
