Soils/exposure : Tuffeau chalk. One of the most mythical terroirs of the appellation located in the commune of Bué.
Age of the vines : average age is 30 years.
Vinification/aging : Manual harvest. Pressing the whole bunch to obtain a juice with substance and body. The must is vinified partly in barrels and in stainless steel vats. Maturation lasts 10 months. It is mostly done in vats but a small part is aged in barrels in order to subtly bring complexity and fatness to the wine without distorting the expression of the terroir.
Taste and nose : Rich and powerful Sancerre. The nose explodes with aromas of ripe fruit. On the palate, the attack is ample and suave releasing delicate aromas of very ripe fruit, exotic fruits (mango). Fine and elegant, this cuvée ends with a persistent saline finish that brings all the hopes of a nice ageing.
Food pairing : This is a rather gourmet wine that goes just as well with fish in sauce (hollandaise sauce) as with white meats with a cream sauce. It can also accompany seafood platters such as lobster, gambas…
