Certification : Organic Agriculture since 2016 and Demeter (biodynamics) since 2021, in the process of conversion to biodynamics
Vinification/aging : Manual harvest. Maceration for 30 days in concrete vats then aging 80% in 228l oak barrels and 20% in concrete vats. No input added during vinification and aging. Sulphited wine at 3gr/hl at the 1st sulphiting.
Taste and nose : It expresses itself with finesse and incomparable fruitiness. Its passage to 80% in oak barrels gives it its toasted notes, notes of undergrowth and red fruits. This Sancerre is in the pure tradition.
Food pairing : beautiful aperitif partner but above all an excellent meal companion! We think for example of an agreement on white meat…delicious!
