Soils/exposure : Red flint clays from the prestigious site of St Andelain, the highest point in Pouilly. Plot of 1 ha.
Age of the vines : 35 years

Vinification/aging : Very slow pressing followed by cold settling. Fermentation and aging in oak barrels, 30% of which are new barrels. The alchemy takes place between exceptional terroirs, the wood of the oak forests of the region (Allogny, St Palais, Bertranges) and the climate of its cellars. Ageing: 11 months in barrels with regular stirring of the lees then stay of 10 months in vats. Light filtration.
Taste and nose : Yellow gold robe. Expressive and complex nose where notes of pineapple combine with brioche and hazelnut. The wood is discreetly present. On the palate, beautiful tension where the minerality brings its very particular note.
Food pairing : This wine will bring a nice touch of complexity and precision to scallops with lime zest, sweetbreads, sea bass in a salt crust or simply to a fine Chavignol AOP or Comté platter.
